Both honey and garlic are known to boost your immune system and this combo is a powerhouse! When you ferment the two together, you are increasing the nutritional value by increasing the potency of both the honey and garlic. Enzymes in the honey are released that are not available when consumed raw. The fermentation process also increases the nutrients in the garlic and makes it more easily absorbed by the body. We know it’s obviously good for you, but it is just as delicious as well!

As the garlic ferments, it loses the “spice” and becomes this amazingly sweet, rich and mild flavored garlic while also infusing flavor into the honey. Both the honey and the garlic can be used in many different recipes. Drizzle some of your honey on your pizza crust, or roasted veggies, make glazed chicken or salmon, and use it in dressings or marinades.

Because both honey and garlic have immune boosting properties, you can eat a clove or take a teaspoon of honey if you feel a cold coming on…. or both! How does the fermentation process work?

When you combine honey and garlic, overtime the honey becomes more liquid and the garlic softens and breaks down to release all of those amazing nutritional benefits. It is best to let it ferment for a month or so, but you can enjoy it after a few days, if you wish. It will last for up to a year. But, I guarantee you’ll run out way before the year is up!

How to make honey garlic

All you need is good quality garlic cloves and raw, local honey. You really do want to use the best quality fresh garlic and raw honey you can find. You’ll peel the garlic, slightly smash it and add to a jar. Then you’ll cover the garlic with honey and place a lid tightly onto the jar. Every day you’ll flip your jar over to let the honey run over the cloves. Leave it for a bit, then place it back on the counter, right side up. After a few days you’ll start seeing some bubbles in the honey and the honey will become more of a liquid. These are good things that mean the fermentation process has begun!

As time goes on, it is important to “burp” the jar by opening the lid on a daily basis. As the honey garlic ferments, pressure accumulates in the jar and you have to let the gasses escape. This happens when you have your lid placed tightly onto your jar. This is all a part of the fermentation process.

Is it safe?

Honey is naturally acidic. While honey can contain botulism spores, because of it’s natural acidity, the spores are unable to survive and will not be able to from reproduce. If you are worried, you can occasionally add just a little splash of apple cider vinegar to increase the acidity.

Fermented Honey Garlic

This super flavorful honey garlic is delicious and good for you. You can make it in minutes and let it ferment on your counter for days, weeks, or months!

Ingredients

  • Garlic cloves (approx. 1 cup)
  • Raw local honey (approx. 1 cup)

Instructions

  1. Clean the garlic cloves and gently smash to encourage the allicin to release.
  2. Place in a clean glass jar.
  3. Pour honey over the garlic cloves.
  4. Place a lid onto the jar and tighten.
  5. Daily - Turn the jar upside down to mix the honey and garlic together.
  6. Daily - "Burp" the jar by loosening the lid and letting the pressure escape.

Notes

You can make as little or as much as you want at a time. Just be sure to have enough honey to cover the garlic cloves.

Use the best garlic and honey you can find. Local raw honey is best.
