The Best Sourdough Pretzel Nuggets
These super soft sourdough pretzel nuggets are always a huge hit! We love to make them for parties, movie nights or just when we want a yummy snack. We prefer these pretzels over any other pretzels we’ve tried! Let us know what you think!

How to make pretzel nuggets
This recipe is super simple. You’ll just place all of the ingredients into a stand mixer and knead the dough for about 20 minutes. You’ll want the dough to be really stretchy. If you can stretch the pretzel dough without it breaking apart, you’ll know it’s ready for the next step. Next, place the dough into a greased bowl, cover tightly with plastic wrap and let ferment overnight or for 12-24 hours.
Once the pretzel dough is done fermenting, you’ll place it onto a clean, lightly floured surface. Divide the dough into 4 pieces. Roll out each piece of dough into a long 1 inch thick rope. Next, cut into equal pieces and place onto a baking sheet lined with parchment paper. Cover the nuggets with a towel and let rise an hour or two. You can certainly skip the rise but I highly recommend it!
Preheat your oven to 425 degrees and fill a large pot with water, baking soda and brown sugar. Once the water mixture is boiling, toss in 5-8 pretzel nuggets and let them boil for 20-30 seconds. Remove with a slotted spoon and place back on the parchment lined baking sheet. Continue this step until all of the pretzel nuggets have been boiled.
Finally, brush with the egg wash and sprinkle salt over the pretzel nuggets. You can skip the salt if you plan to use a different topping like cinnamon and sugar. Bake for 15-20 minutes and until golden brown. Enjoy!!

Why Sourdough?
Sourdough is a fermented dough that is achieved through wild lactobacillaceae and yeast. In order to make sourdough bread, you use a natural leavening agent known as a “sourdough starter” instead of traditional yeast. Sourdough starter is created by mixing water and flour and allowing this mixture to ferment on your counter to create carbon dioxide bubbles. These bubbles allow the bread to rise naturally. The carbon dioxide is activated by the friendly bacteria and wild yeast in the flour and your environment. Sourdough is easier for your body to digest since it is naturally fermented. This makes sourdough bread more nutrient dense, easier to digest and lower in gluten.

The Best Sourdough Pretzel Nuggets
These soft, delicious and crunchy pretzel bites are so good, they won't last long!
Ingredients
- ½ cup of active sourdough starter
- 1 cup lukewarm water
- 3 tablespoons of honey
- 2 teaspoons of salt
- 3 cups of organic unbleached all-purpose flour
For the Water Bath
- 6-8 cups of water
- 3 tablespoons of baking soda
- 3 tablespoons of brown sugar
Egg Wash
- 2 egg yolks
- 2 tablespoons of water
Topping Options
- Coarse salt
- Cinnamon Sugar
Instructions
- Add all pretzel nugget ingredients to a mixer bowl and knead with a dough hook for 15-20 minutes until it will stretchy without the dough breaking.
- Cover the bowl with plastic wrap and let it rest and ferment for 12-14 hours.
- Divide the dough into 4 pieces and roll into 1 inch thick rope.
- Cut into equal pieces and place on a baking sheet lined with parchment paper.
- Cover the pretzel nuggets with a towel and let rise for an hour or two. You can skip this step but I highly recommend letting them rise.
- Preheat the oven to 425 degrees Fahrenheit.
- Add the water to a large pot and bring to a boil.
- Add the baking soda and brown sugar.
- Place 5-8 pretzel nuggets, at a time, into the pot and let boil for 30 seconds, then remove with a slotted spoon and place back onto the parchment paper.
- Brush with the egg wash and sprinkle salt (if topping with salt).
- Bake for 15-20 minutes and golden brown.
- Enjoy!
Notes
If you plan to use cinnamon sugar, bake first and then brush with melter butter and toss in cinnamon sugar mixture.
