Delicious Tomato and Zucchini Salad

This salad is delicious and super refreshing. It is a great way to use up an abundance of zucchini and tomatoes from your garden. With just a few fresh ingredients, you’ll have a delicious salad, perfect for summer picnics, a quick lunch or even dinner.
My mom made a variation of this salad at a summer birthday party and I’m pretty sure we all came back for seconds! It’s just so good!
How to make the salad
This salad is super quick to throw together. You’ll want a large bowl to toss everything in. Begin by cutting the cherry tomatoes in half. I like to use whatever small/cherry tomatoes I have from my garden, which usually includes yellow and red cherry tomatoes and yellow pear tomatoes. Toss those into the bowl and begin cutting up your zucchini. Slice the zucchini into 1/2″ rounds then slice the rounds into bite sized quarters. Toss the zucchini in the bowl with the tomatoes. Dice the onion and add to the bowl. If including feta or another type of cheese, you can add that as well.
Next you’ll want to make your salad dressing. Chop your herbs and combine your lemon juice, oil, garlic, fresh herbs, salt and pepper. Stir until combined. Pour over your tomato, zucchini mixture and stir to coat the salad.
Serve immediately or chill in the fridge in an airtight container for up to two days.

Delicious options
You could add a lot of different ingredients to this salad to switch it up and/or add some protein for dinner. It would be so good with shredded chicken. You could also add quinoa, fresh lemon wedges or zest, and even change out the feta for mozzarella, etc. Feel free to make this salad your own!

Delicious Tomato and Zucchini Salad
A delicious and refreshing salad full of tomatoes and zucchini.
Ingredients
- 4 cups of cherry tomatoes
- 2 zucchini (small to medium size)
- 1/2 a yellow onion (or red for more color)
- 1/4 cup of feta cheese (optional but delicious!)
- 4 tablespoons of lemon juice
- 4 tablespoons of olive oil
- 2 teaspoons of minced garlic
- 1/4 cup of chopped parsley
- 1/4 cup of chopped basil
- 1/4 cup of chopped chives
- salt and pepper
Instructions
- Halve the cherry tomatoes and place in a large bowl.
- Slice the zucchini into 1/2" thin rounds and then into quarters and add to the bowl.
- Dice the onion and add to the bowl.
- Add feta to the bowl and stir.
- In a separate bowl, combine lemon juice, olive oil, garlic, fresh herbs (chopped), salt and pepper. Stir until combined.
- Pour over the tomato, zucchini, onion mixture and stir until combined.
- Serve immediately or chill in the fridge.
Notes
If you don't have access to fresh herbs, you can use dried. Just use 1-2 tablespoons of dried herbs.
Store in the fridge in an airtight container for up to 2 days.
